Carrot cake with mascarpone icing - my clients favorite!
This is one of my clients (and mine) favorite recipe - it is so quick and simple, made in the food processor and keeps un-iced in an air tight container, in a cool place for a week! Alternatively you can use the same mixture as cupcakes! Just bake them for 15-20 minutes.

Aubergine Lasagne/Cabbage Lasagne
This is my go-to if I have friends around for dinner. It is real comfort food, rich, tasty and so delicious! I always make a big amount for at least 8 people, and if I don’t have friends over it goes in the freezer for another day! Don’t put your nose up if you see cabbage - you won’t know, it has this surprising texture of pasta!!!
