Coconut crumbed fish bites with Cauliflower mash, green beans and mayo

Fish bites:

500 g skinless white fish fillets (like hoki)

1 egg

3/4 cup desiccated coconut

2 tbsp Psyllium Husk (optional)

salt

3 tbsp Olive Oil

Cauli mash:

1 Cauliflower

3 tbsp Butter

1 egg yolk

1 tbsp Parsley (or other herb) chopped

salt

Mayo:

1 Egg

1 tsp Mustard

1 cup of light olive oil

Salt, pepper, Herbs or wasabi powder

1 pack of green beans (fresh or frozen)

First make the Mayo. Put the egg in a blender, or use a stick blender, add Mustard and blend the egg, than start slowly(!) adding the oil; keep blending and adding the oil, season to taste. Put in the fridge.

Bring a pot of salted water to boil. Turn the oven to low (for keeping the fish warm)

For the fish:

whisk the egg in a bowl, add a sprinkle of salt. Put the coconut and psyllium husk in another bowl. Cut the fish into bite size pieces, dip them in egg than coat them with the coconut mix - place them on a plate.

Then cut the cauliflower into florets, place them in the boiling water and simmer for around 15 minutes, until tender. Add beans in the last 7 minutes of cooking.

In the mean time heat the oil in a fry pan until hot, add the fish and fry in batches around 6 minutes, turning 4 to 5 times. Put the fried fish bites into the oven to keep warm.

When the cauliflower is tender drain well, put the beans in a separate dish with a bit of salt and butter and keep warm. Add the cauli to the food processor with the butter, egg yolk and salt and blend until smooth. Add chopped herbs.

Plate,…and Voila!
