Zuchini Fritters with Tomato salsa, bacon and paneer
Ingredients:
500 g grated zucchini
1/4 cup grated cheese
1/4 cup LSA
2 eggs
3 tbsp chopped herbs
2 crushed garlic cloves
zest of 1 lemon
1 tsp salt
Tomato salsa:
4 tomatoes cut into cubes
salt, olive oil, basil
Method:
Grate zucchini onto a teatowel and squeeze all the liquid out. Put all the ingredients together , season and let stand for a couple of minutes.
Heat oil in a non stick frying pan and cook first the bacon, than the paneer or halloumi - set aside to keep warm.
In the same pan cook the fritters in patches on medium heat for 3-5 minutes each side.
Serve with tomato salsa, bacon and paneer.
