Healthy Nut & Seed Cookies / Breakfast bars

Recipe:

2 Egg whites

1/3 cup Coconut oil (melted)

1 tbsp ground linseed soaked in 2 tbsp of water

2 tbsp Sesame seeds

2 tbsp Pumpkin seeds

2 tbsp Sunflower seeds

2 tbsp Chia seeds

4 tbsp Linseed

2 tbsp chopped dates

1 tbsp sweetener of your choice - I used coconut syrup but you could use maple syrup or stevia (less)

1 cup ground nuts

Put everything in a blender, whizz it up and form little cookies with a spoon or wet hands.

Bake 15 minutes at 180 C.
